I place my herbs inside a heat-safe glass jar and cover them with room temperature water. That jar then goes into a pot of room temperature water. Everything heats up together slowly and evenly. Here’s what you do not do: • Do not place a cold jar into already hot water the thermal shock can crack the glass and stress the herbs.
